"We can't put these on every corner," Lauren Coulter told Augusta Good News a few days before Biscuit Belly opened in Evans. "We have a scratch-made kitchen. It's a hard restaurant to run."
She and her husband, Chad, opened their Evans location on Tuesday, October 6, at 4274 Washington Road, Suite 2, in Evans Town Centre. It's the third Georgia location for a brand they started in 2019. Four weeks later, Evans has two breakfast-and-lunch restaurants that opened within about 16 months of each other. Eggs Up Grill came first, on June 23, 2025.
Both close by mid-afternoon, and both are open together for most of every day. Their hours split at the edges, though, and those edges decide which one you can actually walk into.
The Week, Laid Out by the Clock
Here are both schedules, from Biscuit Belly's Evans location page and Eggs Up Grill's official Evans listing:
| Time window | Monday to Thursday | Friday to Sunday |
|---|---|---|
| 6:00 to 7:30 a.m. | Eggs Up Grill only | Eggs Up Grill only |
| 7:30 a.m. to 2:00 p.m. | Both open | Both open |
| 2:00 to 3:00 p.m. | Neither | Biscuit Belly only |
| After 3:00 p.m. | Neither | Neither |
Over a full week, Eggs Up Grill is open 56 hours. Biscuit Belly is open 48.5. Most of that time overlaps. Eggs Up has a 90-minute stretch to itself every morning, which adds up to 10.5 hours a week when it's the only one of the two serving. Biscuit Belly's solo time is the 2 to 3 p.m. hour on Fridays, Saturdays and Sundays, three hours a week in total.
So for most of the day the two are interchangeable, at least on the clock. The overlap is where the menu decides it.
What the Overlap Hours Hold
From 7:30 a.m. to 2 p.m., you're choosing between two quite different kitchens.
Biscuit Belly is built around one item. In the Augusta Good News preview, Lauren Coulter described biscuits stuffed with fried chicken, pimiento cheese, eggs or sausage, or smothered in gravy. The base recipe took years of trial and adjustment. It was developed by a chef at another restaurant the Coulters owned, and two menu items, The Rockwell and The Rockwell Supreme, are named after him. The Evans page also lists brunch cocktails.
Eggs Up Grill covers a wider classic diner menu. Augusta Good News reported its signatures as the founder's corned beef hash with potatoes, onions and spices, made-to-order omelets, grilled blueberry muffins and croissant-style donuts, with burgers, melts and salads for lunch. The Augusta Press listed steak and eggs, hash and eggs, biscuits and gravy, a carne asada breakfast burrito and a BBQ chicken melt among the items when it opened.
Both menus include biscuits and gravy. At Eggs Up it's one dish on a long menu. At Biscuit Belly it's the thing the whole restaurant is built around.
The 6 a.m. Edge
The early stretch belongs to Eggs Up Grill, which is open from 6 a.m. to 2 p.m. seven days a week. It sits at 1200 Town Park Lane in the Shoppes at Evans Town Park, off North Belair Road. According to Augusta Good News, the 2,380-square-foot restaurant seats 86 inside and 20 outside, and offers dine-in, takeout, online ordering, delivery and catering.
That makes it the one of the two that's open before a weekday commute or before an early tee time. If you're planning a breakfast meeting or a morning with a group, the catering menu covers eggs, grits, home fries, biscuits and gravy, and muffins, according to the same report.
Owner Clarissa Knotts told Augusta Good News in July 2025 that Evans was "the first of four" locations. She said Grovetown was the likely next site, possibly about a year later. That was a plan described in 2025, and for now the Evans restaurant is the one to count on.
The 3 p.m. Edge
The late stretch goes to Biscuit Belly, but only at the end of the week. It's open 7:30 a.m. to 2 p.m. Monday through Thursday and 7:30 a.m. to 3 p.m. Friday through Sunday.
That extra weekend hour is the only time either restaurant serves after 2 p.m. If you have a long Saturday morning or a Sunday that starts late, Biscuit Belly is still taking orders after Eggs Up has closed. On those days it's the only one of the two where brunch cocktails are an option at 2:30.
The weekday schedule is different. From Monday to Thursday both kitchens close at 2 p.m., and Biscuit Belly's later opening means it serves 90 fewer minutes on those days than Eggs Up.
How the Opening Week Went
Opening week drew a crowd. The Augusta Chronicle reported on October 13 that Biscuit Belly had been packed every day since opening. "It's gotten busier and busier every day," manager Rafael Ramos told the paper.
The opening events are over. WRDW covered a ribbon-cutting on October 6, and Augusta Good News reported a grand-opening celebration that Friday, October 9, where the first 50 customers had a chance to win free Biscuit Belly for a year. Both restaurants take orders online. If the dining room is full during the shared 7:30-to-2 window, the other restaurant is open at the same hours.
Why Evans Got This One
The Coulters live in Louisville, Kentucky, and both grew up in or near Athens. Lauren Coulter told Augusta Good News that Evans is closer to home and suits the brand. "Evans is the typical classic place that has many of our core guests," she said, "young families, a great cost of living, a good work force we can pull from." She was also clear that more locations won't follow quickly. Running a scratch kitchen is the reason she gave.
Put together, the area's two newest breakfast restaurants have very different growth plans, with Eggs Up's owner aiming for four locations and the Coulters keeping theirs deliberately scarce. For Bartram Trail households, the result for now is one Eggs Up Grill on Town Park Lane, one Biscuit Belly on Washington Road, and a weekly schedule where the morning's first 90 minutes go to one and the weekend's last hour goes to the other. For more of what's opened along the Washington Road corridor, see our earlier look at the Evans restaurant corridor, or browse our Bartram Trail neighborhood page.
At the Fairey Team, we keep up with the places that open around Bartram Trail because they're part of what we describe when we market a home here.
